Born into a family of winegrowers from the Chablis area, Clément Lavallée worked with estates such as Leflaive, Dujac and Comte Armand before founding his own domaine in 2016 in Saint-Bris-le-Vineux.
His project covers about 9 hectares in Bourgogne Côtes d’Auxerre, Chablis and Saint-Bris, farmed organically and vinified naturally. Lavallée stands out for his experimental approach, crafting wines from lesser-known terroirs with precision and freshness. He works with spontaneous fermentations, minimal sulphur, and ageing in barrels and amphorae.
His style is pure and tense, and labels such as Les Ardillers, Côte de Jouan and Les Ronces are already benchmarks among Burgundy’s new generation of producers.
